Crazy Days and Slow-Cookers

It’s been a little crazy around here lately.  CRAY…Z!!!  I would have to say this is probably the most hectic school year for us to date…with homework, piano, soccer, youth group and just everyday life.  How do you other moms do it?  Its only the second month of school and I’m already worn out!

For those crazy-busy days when there is no hope of cooking a meal.  You know the nights…when you get home late from sports, or the nights when the littles need some extra homework help…it seems impossible to simultaneously cook a meal.  Keeping it real, there are only so many nights I can feed my kids cereal and breakfast for dinner. 🙂  One tip I can offer is to put a slow cooker meal together before the kids come home from school!  This will help avoid the impulse of picking up drive thru…(don’t get me wrong, there are very appropriate nights for that too). 🙂

Slow cookers offer the option of a quick, decent meal when you are on a time crunch.  Here are six slow cooker meals that friends have shared and have been a life saver for me.  I find myself returning to these recipes a lot lately, on the days I have no time to spend cooking:

1. Sausage, Peppers and Onions

1 or 2 packs of frozen sweet Italian sausage
1  large onion chopped
1 green pepper chopped
2 cloves garlic minced
1 can chicken broth

Place sausage on bottom of slow cooker, top with remaining ingredients and cook on high for 4-5 hours.  Serve over bow-tie pasta with lots of grated Parmesan cheese!

I have made this recipe since we were first married and Lucas still loves it! 🙂

2.  Zesty BBQ Chicken (from my friend Gretchen)

4-5 frozen chicken breasts
1 1/2 cups BBQ sauce
1/2 cup italian dressing
1/4 cup brown sugar
2 Tbs. worcestershire sauce
1/2 tsp cayenne pepper

Mix ingredients, pour over chicken and cook on low for 3-4 hours.  Shred chicken and you are all set!
This recipe makes enough to make two meals during the week.  We usually top baked potatoes with the chicken and add cheese and sour cream (whatever you like).

We also make BBQ chicken pizza later in the week.  Use your favorite dough, top crust with BBQ sauce, shredded chicken and pizza cheese!  We have made nachos with this chicken too.  Its so good!

3. Mexican Salsa Chicken (from my friend Danielle, Lindsay’s sister)

8 Frozen boneless chicken tenders
1 package taco seasoning
1 can black beans drained
1 cup frozen corn
1/2 cup water
1 jar salsa (your choice)
1 block cream cheese

Combine ingredients (except for cream cheese) and cook on high for 3 hours. Shred chicken and add cream cheese. Cook 30 minutes more, stir and serve over rice or with corn chips.

    Oooh- these sound awesome! Thanks for posting- definitely going to try! I love the slow cooker but needed inspiration to get out of my chili and beef stew rut! 👍
